2015 Stonier Sparkling
Chardonnay (70%) from the Evie and KBS Vineyards at Merricks and Pinot Noir (30%) from Jimjoca Vineyard at Balnarring, were picked early in the vintage when the flavour and acid balance were optimum. The fruit was chilled down and gently pressed as whole bunches to preserve the fruit’s delicate characters.
The juice from each vineyard was blended and fermented at cool temperatures (primary fermentation) prior to “tirage” (bottling with the addition of sugar and yeast for the secondary fermentation) in December, 2015. After the completion of the secondary fermentation in bottle, the sparkling wine spent more than two years in the same bottle, developing complex aromas and flavours whilst still in contact with the yeast. The 2015 Stonier Sparkling was disgorged (removal of the yeast and sealing with cork) in September, 2017.
There is a lovely freshness to this sparkling, with the fruit quality of the vintage shaping the palate. There is a strong citrus core and long, driven finish. A refreshing apéritif-style sparkling wine.
