2015 KBS Vineyard Pinot Noir
The east facing KBS Vineyard Pinot Noir always produces small bunches, with 2015 taking this to another level. The small crop of just under 3 tonnes (2.1tonnes/ha) was picked on March 25, with the fruit destemmed into a 2 tonne and 1 tonne open fermenter. With a mix of gentle pump overs and hand plunging the ferment was pressed to French oak puncheons after a total maceration time of almost 3 weeks. Two puncheons were selected (50% new) after 5 months, with the blended wine matured for a further 4 months in a two year old puncheon, prior to bottling without filtration in February, 2016.
